ACT Here are two recipes for pilaf rice dishes, one from Kazakhstan and one from Uzbekistan.
Imagine you need to cook both of them. When thinking about the preparation and the amounts,
what do you need to take into account? What may be the problems with these recipes?
KAZAKH LAMB PILAF UZBEK LAMB PILAF
¼ cup vegetable oil 4 cups long-grain rice
4 large carrots
1 large onion, cut into ½-inch chunks ¼ cup melted lamb fat or vegetable oilkz

2.5–3 lbs boneless pot roast, cut into 4 large onions
2-inch chunks 2 lbs lamb meat
7 thick carrots, cut into matchsticks

¾ tbsp. ground black pepper 2 tsp black pepper

3 bulbs garlic, peeled 3 tbsp ground cumin
(cloves left whole) ½ tbsp paprika
1 cup raisins ½ tsp turmeric or a pinch of saffron
1 handful fresh chives, chopped ½ tbsp tarragon
1 smaller handful fresh dill, chopped ¼ cup dried berries (optional)
3 cups uncooked white jasmine rice 1 large head of garlic, unpeeled
